Food in Sri Lanka

Food in Sri Lanka are spicy, hot or can be combination mainly depend on the individual preferences. Sri Lankan food is distinctive for their culture. Many traditional food items are obtained from Chena cultivation. Cuisine plays a very important role in the festive season in Sri Lanka. The food such as milk rice and special sweets are prepared specially using honey, flour and coconut milk etc on Sinhala & Hindu New Year. The curries can be cooked in a verity of colors and flavors with the use of hot spices. This has the Ayurvedic value when used in curries.


The majority of the Sri Lankans eat vegetables. Many farmers cultivate the paddy and with the use of Rice Ceylon population eat different curries with different tastes. The specialty in Sri Lankan food is differently made in different regions. As an example fishing village community prepare Ambulthiyal unique spicy fish preparation with thick gamboges "Goraka" paste. Certain types of fish like Kelawalla are native to Southern seas. "Lunu dehi" (lime pickle) and jaadi (Pikled fish) are food items made from methods of preserving to dry them in sun during rainless days.
Western region of Sri Lanka has overseas pressure on preparation of food. Many items made using wheat flour always had made Sri Lankan dishes foreign. Since upper western coastal region is dry, fish is dried with salt as a preservative. This is called "Karawala" (dry fish).


Spices such as Cloves, Cardamoms, nutmeg and pepper are found in abundance throughout Kandy and Matale District in 
Sri Lanka. Some sort of food are soups, meat, sea food, vegetables, sambols, mallums etc. Curd and sweetmeats made from Rice flour and palm honey, jiggery.  Various types of fruits are used as dessert. The Palm, Coconut, Kithul are types of honey use to make juicy, sweetmeats like Kavum, kokis, Halape, Thalaguli and Wattalapam etc. Sri Lankans also like to have drinks like tea and coffee.

v  Tea pluckers gathering leaves into their baskets:

Due to political, industrial and economic issues over the past years Sri Lanka has fallen from the position of number one producer in the world to number eight. Producers have to face major problems in making decisions regard to production methods and export markets. To grow the Tea in the country there should be both sunny and wet climates and a strong wider market. Tea pluckers gather tea leaves into their baskets with the use of both hands. They are quick and dynamic in this operation and earn a huge amount of money. Most of the tourists like to see this highlight in the country.

v  Produced mainly from bushes that grow above 4,000 feet
Sri Lankans finest teas are produced mainly from bushes that grow above 4,000 feet. The bushes grow slowly in the cooler, mistier typical weather. Also it is harder to crop due to the vertical angle of the slopes where the tea plants are planted. Tea produced in each district has own individual characteristics of taste, smell and color.
·         Low-grown tea produced at 1,500 to 1,800 feet and at good quality and provides good color and strength.
·         Mid-grown tea grown between 1,800 and 3,500 feet and rich in flavor and provide good color.
·         Higher-grown tea from heights of between 3,500 and 7,500 feet are very best Tea Sri Lanka produces that give a beautiful golden liquid with clear fresh taste and powerful flavor.  

v  Agriculture of Tea
The Tea plant is cultivated array of the tree originating from the region between India and China. The tea leaves are mostly hand plucked. When the plant is plucked two leaves and blossoms are cut. An experienced plucker can pluck up to 30 kg tea leaves per day.

To make one kilogram black tea, approximately 4 kg tea leaves are needed. One tea plant produces about 70 kg black tea a year.

In a temperate the tea plant is plucked for the first time after 5 years and will re-plant the tea for at least 50 years. A suitable climate for cultivation has a minimum annual rainfall of l140mm - 1270 mm. Tea soils must be acid; tea cannot be grown in special soil.

The main three crops in the country are Tea, Coconut and Rubber and beyond them Tea can be seen in a largest boundary on the Island. Also Sri Lanka was famous for Coffee and due to Hemileia Vastatrix disease killed the majority if the Coffee crops. Because of this reason the estate owners had to transfer to other crops. James Taylor is famous for Tea Cultivation.

Most of the Ceylon tea gardens are located at distance from the grounds between 3,000 and 8,000 feet in two areas of the southwestern part of the island, to the east of Colombo and in the Galle district on the southern point. In the hot, steamy plains and foothills, the tea bushes flush every seven or eight days and are picked all year round. 





The supreme teas are gathered from late June to the end of August in eastern districts and from the beginning of February to mid-March in the western parts of the Sri Lanka. Until 1971 most of the island’s tea estates were owned and managed by British population.






History of Ceylon Tea



In the 1840, James Taylor studied about the Ceylon and the opportunities existing there for cultivating coffee. Afterward Taylor moved to the Hill Country and planted not only coffee but also some tea seeds from India. When the Coffee leaf disease blasted the Coffee cultivations; Tea Industry came into play as a creature. Next the mountainside of the hill country was carpeted with the green of tea bushes. And Ceylon Tea became the world’s favorite drink.

The origin of Tea was famous with the Chinese Emperor Shen Nung and he declared that Tea is giving "vigor of body, happiness of mind, and determination of purpose." The Most of the population is drinking gallons of tea on hot, iced, spiced and flavored with or without sugar, honey, milk, cream, or lemon.
